I'm linking up to Kelly's Korner SUYL breakfast recipes. About 6 months ago I realized I wasn't getting enough vegetables in my diet and tried to find some ways to add more veggies into my diet. While eating a bowl of broccoli or other veggie doesn't sound appealing for breakfast, I found out I could successfully add spinach to a morning smoothie and easily gain a veggie for the day! Here's what I do:
Fruit Juice (I typically use orange)
Plain unsweetened yogurt
Fruit (I usually use a banana plus some type of berry - My favorites have been blueberry and blackberry!)
I put enough orange juice in the blender to cover the blade (and prevent the motor from burning out), ad about 1/4 to 1/2 cup of plain yogurt (depends on how much I feel like that day!), lots of spinach (seriously, like at least a cup and a half),throw in a banana and berries, and a few ice cubes. Blend until combined!
What I love about this recipe is that you can adjust it to fit what you like and what you're in the mood for that day! The spinach literally disappears. You can't even taste it! If you prefer a sweeter smoothie, I am sure you could use vanilla yogurt instead of plain or add a little honey to the mix!
As you can tell, this blog is fairly new! You all have inspired me to start keeping track of what my days are like!
