My Favorite Season!

Fall is my absolute favorite season! I love the cooler temperatures, football season, and being able to be outside for more than 2 seconds at a time without sweating. I tell M all the time that I definitely won't miss the summer heat whenever we decide to move from here, but I will definitely miss the mild winters. The one thing I do miss quit a bit is the changing leaf colors....it just doesn't happen here.

In other news, I recently discovered Essie Nail Polish - and I'm in love. Not only are the colors phenomenal, but it goes only smoothly and it is pretty chip resistant. I'm wearing Size Matters today, and I'm ready to try Merino Cool next! :) I still have several colors on my wish list as well.....

...is the time of year when I wake up, go to staff training (most of the time at which I am presenting a session to either our Assistant Hall Directors or RAs), come home, eat dinner, fall into bed, and then wake up and do it all over again the next day. It's 3-4 weeks of 12-16 hour work days (usually including weekends) all culminating into opening weekend for our halls. It's pure craziness, exhaustion, and so many things rolled into one shebang, but I love it. However, I'm glad my year isn't like this all the time.

I'm linking up to Kelly's Korner SUYL breakfast recipes. About 6 months ago I realized I wasn't getting enough vegetables in my diet and tried to find some ways to add more veggies into my diet. While eating a bowl of broccoli or other veggie doesn't sound appealing for breakfast, I found out I could successfully add spinach to a morning smoothie and easily gain a veggie for the day! Here's what I do:

Fruit Juice (I typically use orange)
Plain unsweetened yogurt
Fruit (I usually use a banana plus some type of berry - My favorites have been blueberry and blackberry!)

I put enough orange juice in the blender to cover the blade (and prevent the motor from burning out), ad about 1/4 to 1/2 cup of plain yogurt (depends on how much I feel like that day!), lots of spinach (seriously, like at least a cup and a half),throw in a banana and berries, and a few ice cubes. Blend until combined!

What I love about this recipe is that you can adjust it to fit what you like and what you're in the mood for that day! The spinach literally disappears. You can't even taste it! If you prefer a sweeter smoothie, I am sure you could use vanilla yogurt instead of plain or add a little honey to the mix!

As you can tell, this blog is fairly new! You all have inspired me to start keeping track of what my days are like!

Summer Thunderstorms

The past few days we have had some serious thunderstorms - they are never long, but they are also not very quiet! I LOVE thunderstorms and I have for quite some time. There is just something about watching a storm roll in and seeing the awesome display of lightening and hearing the roll of thunder. I find it very calming and a big reminder of just how huge our God is and how small we are.

I tend to be the girl that thinks too hard about what will be happening a year down the road, 5 years down the road, and 10 years down the road......I am trying so hard to learn to live more in the present, and while I do feel that I have come a very long way....thunderstorms often remind to appreciate the moment and not rush through life.

On a completely unrelated note: Our town got a Jimmy John's today! This makes me sooooooo happy! I haven't had a beach club since I left my undergrad years in Knoxville. I think I might just know what dinner will be tonight! :)

I am trying this out as a way to remember everything - to remember what my life was like when I was 25, what my first job was really like, and all the other small details. I know my family may be the only people who choose to read this, but I hope this gives some others a small glimpse into my life!

Here's a little about me - I am a 25 year old Residence Life Coordinator at a mid-size institution in the South. I work (and live!) in a building complex on campus and manage day to day operations of my facility. I graduated with a BS in Human Ecology from the University of Tennessee in May 2008, and completed my Master's degree in Counseling and Personnel Services in August 2009. I went to work full time at the school where I did my graduate degree, which I will refer to on here as Southern University. I am a huge VOLS fan and still bleed Tennessee orange. My hobbies are baking, knitting, and cruising!

I married my husband in October 2009 after 8 years of dating - he works on campus as a chef for the dining department. His hobbies include gaming and picking on me as much as possible!
